Cabbage (Borsh) Diet Soup

You will need:

  • 1 red beet shredded
  •  3 carrots shredded
  • 3 celery stalks diced
  • 2 tomatos diced
  •  1 onion diced
  • 1/2 potato (*)
  • tablespoons olive oil
  • Chicken or beef stock
  • Shreded beef or chicken (*)
  • head green cabbage shredded
  • Fresh parsley and dill
  • Salt & pepper
  • 2 tablespoons tomato paste
  • Hot sauce (optional)
  • How to prepare the soup:

    1. In a stiring pan add the olive oil and diced onions. Stir in the tomato paste, diced tomatoes, diced celery - let it cook for about 10min. and set it aside.
    2. In a large pot, bring the stock to a boil, add the shredded cabbage, shredded carrots, diced potatoes, and shredded beets. Bring it to a boil for about 10-15min. Stir in the onion and tomato mixture. Add the shredded meat and chopped parsley. Allow it to cook for about 10-15 more minutes. Taste the broth slightly to see if you like the flavor, if not - add some hot sauce, salt, pepper, etc.  

    Why Borsh soup is great:

    Well as you can tell it is loaded with vegetables which gives you all the minerals and vitamins, also fiber. The potatoes are optional because they are carbs, and give the soup some sort of substance. The meat is also optional because you may want to add protein or not, there’s also the issue of being a vegetarian etc.

    I have met women who substitute borsh soup for 2 of their meals and have lost about 7-10lbs per week. I generally make it in a large batches and eat it throughout the week, it doesn’t spoil and tastes fresh for about 5 days, just make sure to refrigerate it and re-heat in your desired bowl.
